Peñas Blancas (Acevedo, Huila, Colombia) is a farm and social project led by renowned producers Nestor Lass and Jhon Vergara. It is located at an altitude of 1,600–1,900 m and collaborates with local smallholder farmers, providing them with education, modern facilities, and support in the production of specialty coffee.
The farm is known for its innovative approach to coffee processing and its emphasis on quality. Thanks to the high altitude and careful processing, coffees with a clean, sweet, and complex flavor profile, typical of the Huila region, are created here.
Castillo Variety
Castillo is a resistant Colombian variety that gains pronounced sweetness, clarity, and balanced fruitiness at the high altitude of the Peñas Blancas farm.
For this batch, only fully ripe coffee cherries were selected. The coffee was processed using the natural method and dried for 25–30 days on raised beds under carefully controlled conditions, contributing to its sweet, clean, and fruity fresh flavor profile.
